Indian Wedding Curry

In the year 1960 I was born in India. But curry was born before me. We were a sibling of six,and our main meal was curry every day. Curry was made in a large pot. You could say that our curry was more like a soup curry, and that the mountain of gravy in the pot was no more than two pieces of chicken or lamb meat for each person, because our curry was made with a lot of water and potato since these were dry days and the income of our household was not enough to give one BBQ in a whole year. There was only one pair of hands working in our family – only one breadwinner – and a lot of hands eating the meal as it was such a large family.

That situation has changed for me now, but there are large volumes of families still living in that situation today. They still cook curry in large pots, and eat lots of homemade chapati (wheat flour bread). The menu is almost the same every day.

Curry can be made of vegetables, chicken, prawns, fish, lamb, meat, beef, lentils and many other products. The process of curry is made differently in many parts of the world, and so are the ingredients used. This will result in the taste being different too. Yet it is still always curry. The definition of curry is that it is spicy, but it can have so many variations depending on the level of spiciness you like, whether you like salty or oily food, or more or fewer onions or tomatoes.

The best curry maker is none other than the family member who does the most cooker – perhaps your mum, sister, or daughter – because when we are used to a certain taste, no one else can meet that standard of taste better than the person you have at home.

However, when you have to order the curry for an Indian wedding event, you normally go to a provider such as Taibah, since you may not be able to cook the curry in the quantity required, and it may ruin the event. Also if the taste of the curry is bad, you will want someone else – outside a family member – to blame! You may hire a caterer since you possibly don’t have the facilities and the network to be able to fulfill the process to its best requirement.

Many restaurants have one curry cooking process. They will often boil the meat in quantity and keep it frozen so that when they have an order for lamb curry they will take the meat from the freezer and put it in the pan, add the ingredients and cook for ten minutes till it is done. This is still a curry, and it will have the same taste at all times.

But the best curry is the one you make yourself. Making curry is as easy as making a cup of tea – and sometimes it can take no more than ten minutes. This is how you can have rice, chicken curry and a chapatti meal made by yourself for two:

Take one tea cup of rice, wash in properly, take a small pot and put two teaspoons of butter into it. After 60 seconds put one and a half cups of water, and let it boil properly until half the cup of water has gone from the pot. then put in your washed rice and salt to your taste. Let it boil for four minutes, then put the lid on top and let it simmer very slowly for an hour and a half. And that’s it.

For chicken curry: take a pot, take six spoons of corn oil, take one small chopped onion. Let it turn half red, and then put in three tomatoes cooked for two minutes. Then add ready made spices purchased from an Indian shop. Then add your washed chicken in a pan. Let it boil or cook for five to eight minutes. Add some yogurt then salt, then add half a cup of water and let it cook for five minutes. Then turn on the heat onto slow for twenty minutes. Then you can made the salad, warm the naan bread with a little butter on top, and have some juice and make a nice plate for two. Enjoy your meal.

That was easy because you are cooking for one, and for fun. When it comes to cooking for an Indian wedding of 500 guests, that is when the real expertise is required.
